During Jesus' time here on earth, His people had their own set of purity laws, rituals and traditions as well. And that's how Mark started this chapter 7 of his gospel narrative. Jesus was in Jerusalem and the Pharisees and the religious leaders gathered around Him. And because they were trying to find a case against Him, they took note of how some of His disciples weren't being careful with the ritual washing before meals.
